Weekend Kitchen...Peach Blueberry Galette

I finally made a galette!  It's been on my list for a long time and after seeing the delicious one that Kendall made I wanted to make one right away!

* Ingredients for Pie Crust:
-  2 1/2 cups flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 2 sticks (8 ounces, 16 tablespoons or 1 cup) unsalted butter, very cold

* Note: Pie crust recipe makes enough for two galette (or one top & bottom pie crust)
.
I have a thing for making homemade pie crust.  Follow Smitten Kitchen's awesome tutorial for homemade pie dough and you will never buy a pre-made crust again!  I am not going to re-type Smitten's directions - so, print out her tutorial and keep it with your cookbooks - you will use it time and time again!

Make the pie dough first, refrigerate, and then prepare filling.  Preheat oven to 350 degrees.

Ingredients for galette filling:
- 2 c. blueberries
- 5 peaches, peeled and sliced
- 1/2 c. sugar (I used Turbinado sugar but regular will work just fine)
- 1tsp. lemon juice
- egg white (optional)

Mix filling ingredients together in a bowl and set aside.

Roll out pie dough .  I decided to bake the galette on my pizza stone but a cookie sheet would work just as well.  If you use a cookie sheet, you might want to line with parchment paper first so that the crust doesn't stick.

Pour filling into a mound in the center of dough.

Fold up the sides and it will look something like this:

If you'd like, brush the dough with egg white and then sprinkle with sugar.

Bake for 40 minutes or until crust is golden brown.

A word of warning about baking - if you use a pizza stone or an un-rimmed cookie sheet, you might want to place a liner in the over.  My filling started to creep off of the pizza stone and drip all over the oven while it was baking.

Let cool and enjoy!
