I wanted a quick and simple dessert bar to bring to a family golf outing this weekend. I searched the internet and found these chocolate cream cheese bars. They weren't the prettiest dessert I've ever made but they sure did taste good and were super easy to make!

Ingredients:
- 3/4 cup butter, plus more for greasing of pan
- 1 cup chocolate chips - semi sweet, divided
- 1 1/2 cups graham cracker crumbs
- 1/2 cup peanuts - unsalted, dry roasted and chopped
- 16 ounces cream cheese - softened
- 1 cup sugar
- 1 teaspoon vanilla extract

1. In a saucepan over medium heat, melt 3/4 cups of butter and 1/3 cup of the chocolate chips. Stir until smooth. Stir in graham cracker crumbs and peanuts. Press this into a buttered 13x9x2 inch pan.

2. Cover and refrigerate for 30 minutes or until set.

3. In a mixing bowl, beat together the cream cheese, sugar and vanilla until smooth. Spread this over the bottom layer.

4. Melt the remaining 2/3 cup of chocolate chips until smooth. Carefully spread this over the cream cheese layer. Cover and refrigerate until set.
5. Cut into 24 squares and serve.

ReplyDeleteI love "chocolate!" "Xocai Healthy Chocolate" is both DIABETIC friendly and CAFFEINE FREE. Contrary to popular belief, “chocolate is quite low in caffeine.”
There is less caffeine in a 2 oz bar than you find in your favorite cup of decaf. "Xocai" is also "sweetened with raw cane juice;" which is a “low glycemic sweetener”
that makes “Xocai Dark Chocolate diabetic friendly.”

These are great! I searched for "graham cracker cream cheese chocolate bars" and this came up - perfect! I took them to a party last night and they were a huge hit. I have a reputation as a good baker and expectations are always high for what I bring, and these got some of the most enthusiastic praise ever! Definitely will be making them again. I did use a bit more chocolate for the topping - maybe a full cup instead of 2/3. I couldn't get it to spread out enough so I melted some more and that worked out fine. Thank you!
