Tasty Tuesdays: Sweet Potato & Cheddar Flatbread


Welcome To Tasty Tuesdays!

I made a flat bread last week with an unusual combination of ingredients.  I was inspired by a recipe I have for a flat bread with butternut squash, but had a sweet potato on hand, so I decided to use that instead. 

Ingredients:
- pizza dough { I used my favorite recipe, find it right here }
- 1 sweet potato, sliced
- handful of fresh spinach leaves
- 1/4 cup red onion, chopped
- 2 tablespoons pine nuts
- 1 tablespoon green onion, sliced
- 3/4 cup sharp cheddar cheese, shredded
- olive oil
- salt & pepper, to taste

1.  Prepare pizza dough according to recipe instructions.  The one I use needs to be prepared the day before.

2.  Preheat oven to 550 degrees.  See the complete directions for the pizza dough preparation and full baking instructions right here.  Roll out dough according to recipe instructions and top with all ingredients and drizzle of olive oil and salt and pepper to taste.

Here's the flat bread on a cookie sheet, all ready to be transferred to the hot pizza stone:


3.  Bake 10-11 minutes, or until crust is golden.

4.  Slice and enjoy!

I served this for lunch along with a green salad.  One nice thing about making a flat bread is that anything goes.  Just think of all the combinations you could try - the options are endless!

  12. In an attempt to cut down on dairy (among other things - because let's face it... my pants don't fit no more)... this week I've brought 2 recipes to the par-tay!

    1. Fish in a Pinch: Fresh & seasonal Pacific pan seared Halibut with oven roasted tomatoes, CSA braising greens & cumin scented quinoa...all in 30 minutes no less!

    2. Habas con Jamon (broad/fava beans with Jamon)... Spain. In. My. Mouth.... no lies.

  14. You look like a great cook from these pics any ways. I'm a crappy cook. My husband cooks so I do the baking. We tired our own pizza once but it was BAD! (oh, btw, I am new to your blog followers - My name's Renae) And... so we don't spend time in the kitchen together. He cooks dinner and I bake the desserts! Works great! see ya around.
